Cantaloupe and Chicken Salad with Yogurt Dressing
In a large bowl, combine chicken, yogurt, dressing, red onions, walnut and dried cranberries.
Serve over lettuce and cantaloupe.
- 1 medium Del Monte® cantaloupe melon, cut into thin wedges with the peel cut off
- ½ head of Del Monte® lettuce
- 2 cups pre cooked chicken, diced
- 5 tbsp vanilla low-fat yogurt
- 5 tbsp Italian dressing (can us reduced or low fat)
- 8 tbsp slivered Del Monte® red onions
- 4 tbsp walnut pieces
- 4 tbsp dried cranberries
