Caramelized Pineapple and Pear salsa

• ½ Del Monte Gold Pineapple
• 20g butter
• 1 tbsp brown sugar
• 1 large pepper
• ½ small onion
• 1 large pear
• 25g fresh coriander, roughly chopped
• 1 tbsp lemon or lime juice
• Olive oil
• Salt & pepper
• Your favourite spice – we like cumin!


1)Slice the pineapple into small chunks and sprinkle the brown sugar on top. Give it a shake or stir until the pineapple is coated. Melt the butter gently in a non-stick frying pan and pop the pineapple into the pan for two minutes until it’s golden brown. Set this aside for the moment. 2)Preheat the grill to medium before dicing the onion, pepper, and pear. Scatter them on a baking tray and drizzle with a bit of olive oil before grilling until they start to soften and char. Remove from the grill and allow to cool. 3)Combine the caramelised pineapple and grilled vegetables into a bowl, add a pinch of salt, pepper, your favourite spice, the lime or lemon juice and the chopped coriander then toss to make sure it’s all coated and serve.
