Carrot Salad with Orange Juice Dressing

Serving:
2 serves

Ingredients:

• 2 large carrots, grated
• 1 tbsp flaked almonds
• 3 tbsp pumpkin seeds
• ½ Del Monte® orange, zest only
• 100ml Del Monte® Orange Juice
• ½ tsp Dijon mustard
• 1 tbsp olive oil
• ½ tsp balsamic vinegar

Preparation:

1)Mix together the carrots, almonds and pumpkin seeds in a bowl. 2)Put the orange zest, Del Monte® Orange Juice, mustard, olive oil and balsamic vinegar into a clean jar or bottle. Screw the lid on tight and shake vigorously. 3)Combine the dressing with the carrot mixture and serve immediately.
