Feta and Pomegranate Salad with Orange Vinaigrette

Serving:
2 serves

Ingredients:

• 300g feta cheese in pieces
• 110g almond flakes
• 4 hands mixed arugula, spinach and mango leafs
• 2 pomegranates
• 50ml Del Monte® 100% Orange Juice
• 2tsp Grey Poupon dijon senap
• 30ml raspberry vinaigrette
• ¼ thyme
• 50ml olive oil
• Salt and Pepper

Preparation:

1)Mix all ingredients to the orange vinaigrette, and marinate feta in approximately 3 hours. 2)Toast the almond flakes lightly in a dry skillet over low heat. 3)Mix arugula, spinach and chard in a large bowl, mix the marinated feta. 4)Sprinkle the pomegranate and roasted almond. 5)Pour extra orange vinaigrette and serve in a bowl alongside.
