Perfect Pita Pizza

• 4 pitta breads (choose from whole wheat, white or even gluten-free)
• 4 tbsp Del Monte passata
• 3 Del Monte tomatoes, diced
• 1 shallot, sliced
• 1 clove of garlic, grated
• 30g grated mature cheddar
• 30g grated red Leicester
• Garlic infused olive oil
• Basil leaves
• Dried oregano


1)Preheat your oven to 200°C and line a baking tray with baking parchment. 2)Pop the pittas on the baking tray and brush them with the garlic infused olive oil before spreading them with passata mixed with the grated garlic cloves. 3)Now’s the fun part – putting the toppings on! Lay each with tomatoes, shallots and the two different types of cheese so each of the pittas are completely covered. 4)Cook in the oven for 10 minutes until the cheese has melted and gone golden and the pitta has started to brown. 5)Sprinkle the oregano on top and dress with the basil leaves.
