Pineapple and Celeriac Coleslaw
• 1 can of Del Monte Crushed Pineapple in Juice
• 1/2 Celeriac
• 1/2 green cabbage, washed
• 2 carrots
• 3 tbsp of light mayonnaise
• Salt and pepper, to season
1)Peel and grate the celeriac and the carrots. Slice finely the cabbage. 2)In a large bowl, mix together all of the ingredients. 3)Season well and chill in the fridge for an hour before serving.
