Ribbon salad

2 serves

Ingredients:

• 2 or 3 carrots
• 1/2 red onion, thinly sliced
• 2 bell peppers, one yellow and one red, thinly sliced
• 2 or 3 cucumbers
• a handful of radishes, thinly sliced
• large handful of spinach leaves or any salad
• few hazelnuts

Preparation:

1)Using a vegetable peeler, make ribbons out of the carrots and cucumbers 2)Toss all the ingredients in a large bowl then season with a light vinaigrette and some hazelnuts
