Thai Banana and Chilli Salad

10 minutes preparation

step1Whisk together all of the dressing ingredients in a bowl and make sure they are fully combined.

step2Put the salad ingredients in a serving bowl and pour over the dressing.

step3Toss well and serve immediately.

Ingredients

  • 2 red chillies, finely sliced
  • 1 tsp fresh ginger, grated
  • 1 tbsp fish sauce
  • 2 tbsp Del Monte® lime juice
  • 1 tbsp brown sugar
  • 60ml semi-skimmed milk
  • 1 tsp coconut essence
  • 3 Del Monte® bananas, sliced into rounds
  • 200g baby gem lettuce
  • 1 Del Monte® cucumber, sliced
  • 4 fresh mint leaves, chopped
  • ½ bunch of fresh coriander leaves chopped
  • 40g cashew nuts, unsalted
