Thai Banana and Chilli Salad

Ingredients:

• 2 red chillies, finely sliced
• 1 tsp fresh ginger, grated
• 1 tbsp fish sauce
• 2 tbsp Del Monte® lime juice
• 1 tbsp brown sugar
• 60ml semi-skimmed milk
• 1 tsp coconut essence
• 3 Del Monte® bananas, sliced into rounds
• 200g baby gem lettuce
• 1 Del Monte® cucumber, sliced
• 4 fresh mint leaves, chopped
• ½ bunch of fresh coriander leaves chopped
• 40g cashew nuts, unsalted

Preparation:

1)Whisk together all of the dressing ingredients in a bowl and make sure they are fully combined. 2)Put the salad ingredients in a serving bowl and pour over the dressing. 3)Toss well and serve immediately.
