Tomato Bruschetta

• 4 Medium Del Monte® tomatoes, chopped
• 1 Del Monte® red onion, diced
• 1 tbsp coarse kosher salt
• 1 loaf of crusty bread, sliced thinly or crackers
• 1 garlic clove
• 3 tbsp extra-virgin olive oil
• 2 tsp balsamic vinegar
• 10 basil or parsley leaves, chopped
• Freshly ground black pepper


1)Sprinkle Del Monte® tomatoes with salt. 2)Toss with the vinegar, chopped herb, diced red onion, and pepper. Set aside. If using bread, toast the bread slices under the broiler. 3)Rub the top of each of bread slice or cracker with the garlic clove and brush with the olive oil. 4)With a slated spoon, top each bread slice or cracker with the tomato mixture.
