Super Quick Noodles

• Groundnut oil
• 225g tinned water chestnuts, drained and sliced
• 225g tinned baby corn, drained, cut in half
• ½ x 432g tin DEL MONTE® PINEAPPLE CHUNKS IN JUICE, drained, juice reserved
• 1 red pepper, deseeded and sliced
• 2 packets wok-ready egg noodles
• Salt and pepper, to season
• 4 spring onions, chopped
• ➡ For the dressing:
• 3tbsp pineapple juice
• 2tbsp olive oil
• 2tbsp soy sauce
• 2tbsp honey


1)Heat the groundnut oil in a wok or large pan. Add the water chestnuts, corn, DEL MONTE® PINEAPPLE and pepper and stir-fry for two minutes. 2)Add the wok-ready noodles and cook for another two minutes, stirring occasionally. Season well. 3)Meanwhile, beat the reserved juice from the tin, olive oil, soy sauce and honey together in a small jug. 4)Pour the pan’s contents onto a pretty serving platter, pour over the dressing and serve garnished with spring onion.
